Serves: 4
Prep time: 5 minutes
Cook time: 10 minutes

Ingredients:

  • 2 cups milk (whole or toned; plant-based milk also works)

  • 2 tbsp unsweetened cocoa powder

  • 2 tbsp cornstarch (for thickening)

  • 1/4 cup sugar (adjust to taste)

  • 1/4 tsp salt

  • 1/2 cup dark or semi-sweet chocolate chips (or chopped chocolate)

  • 1/2 tsp vanilla extract

Instructions:

  1. Mix dry ingredients:
    In a saucepan (off the heat), whisk together cocoa powder, cornstarch, sugar, and salt.

  2. Add milk gradually:
    Slowly pour in the milk, whisking constantly to avoid lumps. Once smooth, place the saucepan on medium heat.

  3. Cook and thicken:
    Stir the mixture continuously over medium heat. After 5–7 minutes, it will start to thicken—keep whisking until it resembles a smooth custard.

  4. Add chocolate & vanilla:
    Turn off the heat and stir in the chocolate chips and vanilla extract. Keep mixing until the chocolate is fully melted and glossy.

  5. Chill or serve warm:
    Pour into small bowls or ramekins. You can enjoy it warm, or refrigerate for 1–2 hours for a firmer pudding texture.

Optional Toppings:

  • Whipped cream or Greek yogurt

  • Shaved chocolate or cocoa dust

  • Chopped nuts (almonds, pistachios, walnuts)

  • Fresh berries or banana slices
